Tomato & Red Pepper Soup

Tasty, healthy and warming!

Ingredients:

  • 3 red peppers,
  • 1 White onion
  • 4 Cloves of garlic, crushed
  • 2 tins of tomato
  • 450ml Vegetable stock.
  • 1- 2tbsp Olive oil.

Method:

  • Chop up red peppers into fine pieces.
  • Chop up onion into fine pieces
  • Crush garlic cloves.
  • Place cooking pot onto hot a hob and drizzle 1 -2 tlb spoon’s of olive oil.
  • Put garlic cloves in and stir until slight briwn
  • Add the onion and stir until soft and slightly golden
  • Add the peppers and cook until soft.
  • Add the vegetable stock and let it cook until it begins to simmer.
  • Remove the pot from the hob and either using a hand held or container food processor mix until a smooth consistency is achieved.
  • Add salt and pepper to season.
  • Sit back and enjoy!
