
Ingredients:
- 3 red peppers,
- 1 White onion
- 4 Cloves of garlic, crushed
- 2 tins of tomato
- 450ml Vegetable stock.
- 1- 2tbsp Olive oil.
Method:
- Chop up red peppers into fine pieces.
- Chop up onion into fine pieces
- Crush garlic cloves.
- Place cooking pot onto hot a hob and drizzle 1 -2 tlb spoon’s of olive oil.
- Put garlic cloves in and stir until slight briwn
- Add the onion and stir until soft and slightly golden
- Add the peppers and cook until soft.
- Add the vegetable stock and let it cook until it begins to simmer.
- Remove the pot from the hob and either using a hand held or container food processor mix until a smooth consistency is achieved.
- Add salt and pepper to season.
- Sit back and enjoy!
